Nutrition For All Ages!
With more than one-third of US adults now obese, promotion of a healthy lifestyle that includes a balanced, nutritious diet and physical activity is more urgent than ever. Many Americans consume too much saturated fat and added sugar, cholesterol, sodium, and refined grains. At the same time, both adults and children do not eat enough fruit, vegetables, whole grains, low-fat milk products, and oils. Consequently, nutrients that may be inadequate in the American diet are vitamin D, calcium, potassium, and dietary fiber. To prevent obesity and improve health, community nutrition programs must reach families, schools, communities, businesses, health care providers, and government policy-makers. This website is designed to provide research updates, nutrition education resources, and evaluation tools that can help those working in the community to support Americans in adopting healthy lifestyles and improving the food environment.
About Dr. Kaiser
Dr. Lucia Kaiser is a faculty member in the Department of Nutrition on the UC Davis campus, where she has worked since 1995 to promote nutrition in the community. As a Cooperative Extension specialist, she is available to conduct nutrition workshops, seminars, in-service training events, and media outreach to the general public, as well as to health providers. In collaboration with local county-based Cooperative Extension faculty advisors and graduate students, Dr. Kaiser is actively engaged in community-based research studies related to Latino diet and health, child feeding practices, food insecurity, and diabetes prevention, among other topics.
